Chef Brian Weaver cooks with passion. Growing up in a German family with Southwestern roots, the Avon native creates boldly flavored, deeply satisfying dishes. After finishing High School in Avon, Brian moved to the East Side to begin his culinary journey. Brian apprenticed under renowned Classical French Chef, Steffan Rieger. In 2006 Brian became the Executive Chef of Gusto Ristorante Italiano, the elite fine dining restaurant in Little Italy. In 2014 Brian left Gusto to open the famed, Cleveland A-list restaurant Luca. Now, this homegrown, award winning chef finally came home to open his own restaurant with his family, Avon Brewing Company and Grille.
